
Kashmiri Zarda (Sweet Rice)

Ingredients:
Lalbaba Basmati Rice - | 1 cup |
Sugar - | 3/4 cup (adjust to taste) |
Milk - | 1 cup |
Water - | 1.5 cups |
Saffron Strands - | a pinch |
Cardamom Powder - | 1/2 teaspoon |
Ghee - | 3 tablespoons |
Mixed Nuts (cashews, almonds, pistachios) - | 1/4 cup (chopped) |
Raisins - | 2 tablespoons |
Kewra Water (Pandanus extract) - | 1 teaspoon (optional) |
Food Color (yellow or orange) - | a few drops (optional) |
Step-by-Step Recipe:
1. Prepare the Rice:
- TRinse the basmati rice until the water runs clear. Soak it in water for about 30 minutes, then drain.
2. Cook the Rice:
- In a saucepan, bring 1.5 cups of water to a boil. Add the soaked rice and a pinch of salt. Cook until the rice is 70% cooked (it should still have a bite to it). Drain and set aside.
3. Make the Zarda:
- In the same saucepan, heat ghee and add chopped mixed nuts and raisins. Sauté until the nuts are golden brown.
- Add the partially cooked rice to the saucepan and gently mix. Sprinkle sugar over the rice and pour in the milk. Add saffron, cardamom powder, and food color (if using).
- Stir gently to combine all the ingredients.
4. Steam the Zarda:
- Cover the saucepan with a lid and cook on low heat for about 15-20 minutes, allowing the flavors to meld and the rice to finish cooking. Avoid stirring during this time to keep the rice intact.
5. Finish and Serve:
- Once cooked, turn off the heat and let it rest for a few minutes. Add kewra water for fragrance (if using).
- Fluff the Zarda gently with a fork before serving. It can be enjoyed warm or at room temperature.
