Lalbaba Gobindobhog Rice Flour - | 1 cup |
Grated Coconut - | 1 cup |
Jaggery (Nolen Gur) - | 1/4 cup |
Water - | 1 cup |
Salt - | a pinch |
Cardamom Powder - | 1/2 teaspoon |
Ghee - | 1 tablespoon |
A quintessential Bengali dessert prepared during Makar Sankranti, these sweet rice cakes are stuffed with a delectable coconut filling and steamed to perfection.
Step-by-Step Recipe:
1. In a pan, add jaggery and a little water to melt it.
2. Add grated coconut and cook until the mixture thickens.
3. Add cardamom powder, mix, and let it cool.
4. For the rice dough, boil 1 cup water with a pinch of salt and 1 tablespoon ghee.
5. Add the rice flour gradually and mix until it forms a soft dough.
6. Take small portions of dough, flatten into discs, and place a spoonful of coconut filling in the center.
7. Fold the discs to seal the edges and shape them like half-moons.
8. Place the filled pithe in a steamer and steam for 10-15 minutes until cooked.
9. Serve warm with a drizzle of extra jaggery syrup.
