Ingredients:
Basmati Rice (soaked) - 1 cup
Coconut (grated) - 1 cup
Sugar - 1/2 cup (adjust to taste)
Milk - 1 cup
Cardamom Powder - 1/2 cup
Rice Flour – - 1/2 teaspoon
Ghee or Oil - for cooking
Step-by-Step Recipe:

1. Prepare the Filling:

  • In a pan, mix grated coconut and sugar. Cook on low heat until the sugar melts and the mixture thickens. Add cardamom powder and mix well. Remove from heat and let it cool.

2. Make the Batter:

  • Blend the soaked rice with milk to form a smooth batter. Add rice flour to the mixture and mix until smooth.

3. Cook the Rice Cake:

  • Heat a non-stick pan and grease it with ghee or oil. Pour a ladleful of batter onto the pan, spreading it into a thin crepe.
  • Cook for a minute until the bottom is slightly golden. Place a spoonful of the coconut filling in the center and fold the crepe over the filling. Cook for another minute.

4. Serve:

  • Repeat with the remaining batter and filling. Serve warm with a drizzle of ghee on top.
